Hi Friends! Today I'm back with a fun summer recipe that I just had to share! I made this yummy drink yesterday and let me tell you, it is HARD to take pictures of drinks! In real life, the mixture is the prettiest shade of lavender but in my pictures, it almost looks gray. #LightingProbs Also, fun fact: Normally when using this much water for a recipe, I would definitely use the tap. Our tap water is (luckily) clean enough to cook with/drink. However, yesterday of ALL DAYS when I am planning to use a whole bunch of it for this lemonade, they flushed the fire hydrant on our street and ALLLL of our water was a lovely shade of yellow/brown for the entire day. Figures. Fridge door water to the rescue!
-2 cups sugar
-2 cups water (FROM THE FRIDGE)
-1/4 cup honey
-3 tablespoons dried organic lavender
*I used Sprouts organic lavender and it was a GREAT price. I paid less than $1 for way more than I needed for this recipe.*
-2 cups freshly squeezed lemon juice (approximately 10 lemons)
-4 cups water (STILL FROM THE FRIDGE)
-A drop of red and blue food coloring (if you're extra like me and have to make your lavender lemonade really lavender colored)
-1 additional lemon to slice for garnish
-Combine 2 cups of water and 2 cups of sugar in a medium sauce pan and heat until all sugar is dissolved
-Remove from heat and stir in honey and dried lavender
-Cover and let steep for 15 minutes (while you get to juicing those 10 lemons!)
-Juice your lemons until you've got 2 cups of that freshly squeezed goodness.
(I used the kitchen-aid citrus juicer attachment that I JUST discovered for less than $20 on amazon and I LOVED it) you can buy it here. It really did make juicing all these lemons quick and easy.
*RANDOM TIP: If you microwave each lemon for 10 seconds, it really loosens up the juice!*
-Add your freshly squeezed lemony goodness to the pitcher
-Strain the lavender from your simple syrup (most people would use an actual strainer...but mine was dirty...so Chemex to the rescue! It actually worked like a charm!
-Add your now strained, lavender-infused simple syrup to your lemon juice
-Top the whole mixture off with 4 cups of cold water
Optional: add a drop of red and a drop of blue food coloring and mix well
-Add ice or simply refrigerate until cold
Like I said, it was SO hard to accurately capture the beauty of this lemonade and I tried it in SO many different locations (as you're about to see). However, it was pretty, it was delicious, and it was so worth all of the steps!
